Rainy Day Banana Bread
- 2 c. dry cereal (any kind)
- 2 c. flour
- 5 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. ground cinnamon
- 1/2 tsp. grated nutmeg
- 1/4 tsp. ground ginger
- dust of cloves
- 1 c. raisins
- 4 very ripe bananas
- 2 eggs
- 1 c. vegetable oil
- 1 c. apple cider or orange juice or water
- Heat oven to 375u0b0.
- Generously grease 2 (9 x 5 x 3-inch) loaf pans.
- In a large bowl, mix cereal, flour, baking powder, salt and spices.
- Stir raisins into dry ingredients so that they are thoroughly coated.
- Place bananas, eggs, oil and cider in blender container and process a second or two.
- Or, stir in dish until blended and bananas are broken up.
- Pour batter into prepared pans and bake about 45 minutes, until loaves have risen, pulled away from sides of the pan slightly and probably cracked on top.
- Let cool in pans for 10 minutes, then turn out on rack to cool completely.
- Store in tightly sealed plastic bag, not in the refrigerator.
