Apple And Cream Cheese Filled Chicken With Mustard Cream Pasta
- 2 chicken breasts pounded
- 1/2 granny smith apple thinly sliced
- 3 tablespoons cream cheese
- salt and ground black pepper
- 1 tablespoon olive oil
- 2 cups macaroni or other similarly shaped pasta, cooked al dente, with some cooking liquid reserved
- 2 tablespoons cream cheese
- 2 tablespoons half-and-half
- 1/4 cup lowfat milk
- 2 teaspoons mustard
- salt and ground black pepper
- Salt and pepper the chicken breasts. Place the apple slices on top of each and spread with cream cheese.
- Roll up each chicken breast, using toothpicks to keep closed.
- Saute in olive oil on medium heat until golden brown on all sides and cooked through.
- Remove from skillet and set aside for 5 minutes. Remove the toothpicks and slice into diagonals.
- Blend the cream cheese, half and half, milk, mustard, salt, and pepper together in the blender.
- Add the cream sauce to the pasta with a little of the reserved cooking liquid.
- Place the pasta onto serving dishes and top with the chicken slices.
