Wild Rice Salad With Pomegranates And Avocado
- 3 tablespoons chives chopped
- 1 teaspoon orange zest or lemon zest
- 1 tablespoon honey
- 2 tablespoons orange juice or lemon juice
- 1/2 teaspoon ginger powder or grated fresh ginger
- salt
- ground black pepper
- 2 tablespoons olive oil
- 1 1/2 cups black rice cooked according to package instructions
- 1 cup berries pomegranate
- 1 avocado
- 1 carrot sliced and slightly cooked
- 2 strips red pepper
- 1 tablespoon chives chopped
- In a small bowl, mix 2 tablespoons of chives, orange zest, orange juice, honey, ginger, salt, and black pepper.
- Mix with olive oil. Set aside.
- In a bowl, mix the cooked rice with the pomegranate berries, avocado, red pepper, carrot slices, and 1 tablespoon of chives.
- Add the sauce only when serving, season with salt and pepper to taste, if necessary.
