Coffee Cupcakes & Milk Coffee, White Chocolate Icing
- 11/16 cup dark chocolate 70% cacao
- 2 cups sugar
- 1 3/4 cups flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup coffee
- 1/2 cup creme fraiche
- 7/8 cup seed oil, grape
- 2 eggs
- 7 tablespoons unsalted butter icing
- 3 1/3 cups icing sugar icing
- 1/2 cup whipping cream icing
- 1 teaspoon instant coffee icing
- 1/2 teaspoon coffee extract icing
- 1 3/4 ounces chocolate icing white
- Preheat oven at 170u0b0C
- Melt the chocolate au bain marie, and put it on the side.
- Mix the hot coffee, the creme fraiche and the oil.
- Add the eggs, one by one.
- Then add the chocolate delicatly and mix well.
- Add the dry ingredients progressively and mix well.
- Bake 20min.
- Let the cupcakes cool down before adding the icing.
- ICING : Mix the powder coffee and the cream, add the coffee extract, mix and set aside.nix the butter and 200g sugar during 30sec and then add the cream mix. Mix on medium speed for 4min, then slowly add the other 200g sugar. Continue mixing until you get an homogenous mix.
- When you add the icing onto the cupcakes, sprinkle some white chocolate on it.
