Chocolate Coffee Cake With Milk Chocolate Icing
- 1 3/16 cups dark chocolate
- 7 tablespoons unsalted butter
- 1 tablespoon instant coffee
- 4 eggs
- 2 egg yolks
- 1/2 cup sugar
- 9/16 cup flour
- 11/16 cup almonds grind
- 3/4 cup milk chocolate
- 5 1/2 tablespoons cream cheese to spread
- Preheat oven to 180 degrees Celsius.
- Grease a springform pan with butter and sprinkle with flour. Line with parchment paper.
- Melt chocolate with butter in the microwave, remove from heat, add the coffee to mix while stirring well. Set aside.
- Mix eggs, yolks, and sugar together until light and whitish.
- Gently add flour and almonds, and finally the reserved chocolate mixture.
- After mixing, pour in pan, and bake for 30-35 minutes, or until a toothpick comes out dry.
- Melt the milk chocolate in a saucepan, add cream cheese.
- Stir until a very creamy and homogeneous mixture is obtained.
- Spread the cream on the cake, decorate to taste.
