Sea Bass Sashimi With Sesame Dressing
- 1 pound sea bass fillets sashimi-grade, skin removed, very thinly sliced
- 2 tablespoons light soy sauce
- 2 tablespoons orange juice freshly squeezed
- 1 tablespoon fish sauce
- 1 tablespoon sesame oil
- 1 tablespoon fresh ginger finely grated
- 1 kaffir lime leaf center vein removed, finely shredded
- 1 fresh long red chlli, deseeded, finely chopped
- 2 tablespoons sesame seeds toasted
- 1 orange segmented medium
- mint leaves to garnish
- Arrange fish on individual serving plates.
- In a small bowl, whisk together soy sauce, juice, fish sauce, sesame oil, ginger, lime leaf, chili and sesame seeds. Season to taste.
- Arrange orange segments and herbs over fish. Drizzle with dressing. Serve.
