Baked Rice With Octopus
- cooking oil
- 1 onion finely chopped
- 1 red bell pepper finely chopped
- 1 green bell pepper finely chopped
- 1 tomato
- 1 1/8 pounds octopus cooked
- paprika
- 1 1/3 cups rice
- fish
- broth
- salt
- Preheat the oven to 220C.
- In a paella pan, saute the onion and the peppers, all finely chopped.
- Once cooked, add the tomato.
- Slice the octopus and add to the paella pan.
- Stir and add the paprika.
- Add the rice and cook for a minute, stirring to make sure it absorbs the flavors.
- Separately, heat the fish and shellfish broth.
- Pour in twice as much broth into the paella pan as there is rice, add salt to taste.
- Bake for 18 minutes. The liquid should evaporate.
- Let the rice rest for a few minutes and serve.
