Hula Chicken
- 4 boneless, skinless chicken breasts
- salt
- pepper
- 2 tablespoons olive oil
- 2 cloves garlic minced
- 8 slices deli ham
- 4 slices swiss cheese omit for dairy free
- 4 pineapple rings canned
- 1 tablespoon margarine Nuccoa is dairy free
- 1/2 cup fresh mushrooms chopped
- 1/2 cup green bell pepper chopped
- 1/2 cup sweet onion diced
- 1/2 cup mayonnaise
- 1 teaspoon prepared mustard
- Preheat oven to 350 degrees.
- Season chicken with salt and pepper.
- Heat olive oil in a skillet. Brown garlic in oil, then add chicken and cook until nearly done. Do not overcook. Place on a baking sheet.
- Heat butter in a small skillet. Saute mushrooms, peppers and onion until tender. Remove from heat and set aside.
- Top each chicken breast with a pineapple ring, then 1/4 of the mushroom mixture, then 2 ham slices and then a slice of cheese.
- Bake in a preheated oven for 10-15 minutes or until the cheese is melted.
- Mix the mayonnaise and mustard together.
- Serve the chicken with a dollop of mayonnaise mixture on the side.
