Chicken And Chickpea Chili

  1. Heat olive oil in a Dutch oven or soup pot.
  2. Flame should be medium to low. Add onions and cook for about 5 minutes, or until soft and translucent.
  3. Add the garlic. Cook for about 1 minutes.
  4. Add the spices and move around pot for about 1-2 minutes.
  5. Add the ground meat, 1 teaspoon of salt and 1/2 a teaspoon of pepper. Cook meat until completely cooked thru.
  6. Then add the chickpeas.
  7. Add the tomatoes, sugar and chicken stock.
  8. Bring the soup to a bowl.
  9. Then reduce heat and allow to simmer for about 40-45 minutes. Taste.
  10. Add more salt and pepper if necessary.
  11. Add the orzo pasta. Cook for 6 minutes.
  12. Turn off heat and add the spinach.
  13. Serve with crusty bread or crackers
