Chilly Billy
- 2 lb. ground chuck
- 1-1/2 lb. hot sausage
- 2 Tbsp. olive oil
- 1 green pepper or plabono pepper, chopped
- 3 large onions, chopped
- 4 cloves garlic, chopped
- 1 tsp. dry parsley
- 1 large can tomatoes and small Rotel
- 1/3 c. chili powder
- 1-1/2 tsp. salt
- 3/4 tsp. black pepper
- 3/4 tsp. Accent
- 1-1/2 tsp. sugar
- 1/2 can beer
- 3 cans kidney beans (1 red, 1 dark red, 1 white)
- Brown beef and sausage in heavy pot.
- Saute peppers in oil for 5 minutes.
- Then add onions and garlic.
- Cook until tender.
- Add tomatoes and parsley.
- Stir in chili powder.
- Cook 10 minutes and add remaining ingredients EXCEPT beans.
- Cook covered.
- Simmer 1 hour.
- Then add beans.
- Let cook on lowest heat for another 1 hour. Stir occasionally.
- Keep on lowest heat.
