Yellow Curry Paste
- 1 teaspoon ground coriander
- 2 teaspoons ground cumin
- 1/2 teaspoon ground cinnamon
- 1 teaspoon turmeric fresh grated
- 3 yellow bell peppers long, chopped
- 1 lemongrass stalk white part, chopped
- 1 garlic clove minced
- 1 onion chopped
- 2 teaspoons galanga fresh grated
- 1 bunch fresh cilantro minced
- 1 teaspoon shrimp paste found at Asian grocery stores
- 1 tablespoon oil
- In a small pan without any fat toast coriander, cumin and cinnamon until fragrant (1 to 2 minutes)
- Put the toasted spices and all the remaining ingredients(except the oil) in a mortar and mash them to get a smooth paste. Add the oil and mix.
- Store in the refrigerator or freeze it in small portions.
