Kissie Omelette Scrambler

  1. In a large nonstick skillet, prepare hash browns according to package directions.
  2. After turning once, sprinkle 2/3 cup of cheese over potatoes.
  3. Transfer to a platter.
  4. In bowl, beat together eggs and milk.
  5. Add ham, chopped pepper, onion and remaining 2/3 cup cheese.
  6. Add egg mixture to skillet.
  7. Cook over medium heat, stirring occasionally, for 5 minutes or until eggs are set but still moist.
  8. Spoon egg mixture over center of hash browns.
  9. Serve with sour cream and salsa.
