Soba Noodles, Cucumber & Carrots
- 3 carrots grated
- 2 cucumbers grated
- 1 tablespoon fresh ginger grated
- 1 tablespoon cilantro / parsley.
- 1 date finely chopped, / 1 TBS date honey, * definitely recommend the Palm
- 1 tablespoon olive oil
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 scallions chopped / 1 TBS Ispanakhi, A spicy spinach, walnuts Tapenade
- 1. First, prepare the soba noodles using the instructions listed on the back of the packaging.
- 2. Grate the carrots and cucumbers using a food processor or a grater.
- 3. In a small bowl, Mix vinegar, ginger, date / date honey, soy sauce, sesame oil, olive oil, and ispanakhi.
- 4. Add the vegetables and mix well.
- 5. Add the soba noodles and mix well.
- Sprinkle over the slices scallions, you can also top with chopped almonds or pine nuts and serve with fresh lemon slices (:
