Soba Noodles, Cucumber & Carrots

  1. 1. First, prepare the soba noodles using the instructions listed on the back of the packaging.
  2. 2. Grate the carrots and cucumbers using a food processor or a grater.
  3. 3. In a small bowl, Mix vinegar, ginger, date / date honey, soy sauce, sesame oil, olive oil, and ispanakhi.
  4. 4. Add the vegetables and mix well.
  5. 5. Add the soba noodles and mix well.
