French Market Soup
- 1 c. bean mix
- water
- 1 1/2 tsp. salt
- ham pieces
- 1 bay leaf
- thyme
- 1 pt. tomatoes
- 1 medium onion, chopped
- 1 whole clove
- 1 clove garlic, finely chopped
- 1/2 chopped green pepper
- salt and pepper
- 1 1/2 lb. smoked sausage
- uncooked chicken
- parsley
- Wash bean mix; drain.
- Add water to cover and salt; soak overnight.
- Drain and add 1 1/2 quarts of water, some ham pieces, bay leaf and pinch of thyme.
- Simmer 3 hours, covered.
- Add tomatoes, onion, clove, garlic, green pepper and salt and pepper to taste.
- Also add smoked sausage, cut in thick slices, and several pieces of uncooked chicken.
- Simmer until chicken is tender. Remove meat from bone and cut chicken into small pieces, then return to soup.
- Ten minutes before serving, add chopped parsley, either fresh or dried.
