Crunchy Hot Chicken Salad
- 1 chicken, boiled
- 3/4 c. mayonnaise
- 1 can cream of chicken soup
- 1 can cream of celery soup
- 1 (8 oz.) can sliced water chestnuts
- 1/2 tsp. salt
- 1 c. chopped celery
- 2 c. crushed Ritz crackers
- 2 Tbsp. lemon juice
- 1/4 tsp. pepper
- 3/4 c. slivered almonds
- 1/4 c. chicken broth
- 1 chopped onion
- 4 chopped hard-boiled eggs
- 1 Tbsp. pimentos
- Mix soup, mayonnaise, broth, lemon juice, salt and pepper. Add chicken, celery, pimento, almonds, water chestnuts, onion, eggs and 1 cup of Ritz cracker crumbs.
- Put into casserole dish; top with the remaining cracker crumbs.
- Bake at 350u0b0 for 40 minutes.
