Shrimps In Spiced Coconut Milk/ Chingri Malai

  1. De-shell and wash the shrimps nicely.
  2. Marinate with 1/2 teaspoon of salt and half the turmeric powder. Keep aside
  3. Heat a tablespoon of oil in a saucepan.
  4. Add the onions and saute till pink.
  5. Add the garlic and tomatoes and continue to saute till slightly browned.nemove, cool and grind to a smooth paste.
  6. In the same saucepan add another tablespoon of oil and heat it.
  7. Add the marinated shrimps and saute till they turn opaque. Remove and keep aside.
  8. Add another tablespoon of oil to the saucepan.
  9. Temper with bay leaf, cardamoms, cloves and cinnamon. Saute till spices release their aroma.
  10. Add the ground paste along with rest of turmeric powder and red chili powder.
  11. Pour in the coconut milk and simmer the sauce for a minute.
  12. Add the shrimps back in and some more salt and cover and cook for about 10 minutes.
  13. Add in the sugar and taste to balance the flavors.
  14. Lastly add the nutmeg powder, mace powder and drizzle 1 teaspoon of ghee on top.
  15. Switch off the heat and let it rest for the flavors to develop.
  16. Serve Chingri Malai or Shrimps in spiced coconut milk with steamed basmati rice for a delicious and decadent meal.
