Mushrooms And Edamame Salad
- 200 grams mushrooms sliced
- 1 teaspoon olive oil
- 1 centimeter ginger ground
- 1 teaspoon pepper chile de arbol
- 1 cup edamame cooked
- 1/3 cup red bell pepper minced
- 1 tablespoon sesame
- 1 teaspoon rice vinegar
- Grease a skillet with cooking spray and preheat on high.
- Add the mushrooms to the skillet, cook them until they brown, and remove them from the skillet.
- Add the olive oil, ginger, and chile de arbol pepper to the skillet. Let them cook for 1 minute then remove them.
- Cook the edamame beans on the same skillet for 3 minutes.
- Add the red bell pepper and mushrooms to the skillet and cook for 3 more minutes.
- Add the sesame and the vinegar, and turn off the stove.
- Mix all the ingredients in a salad bowl and serve.
