Chipotle Shrimp Tacos With Mango Salsa

  3. Cut tomatillos in half, Lightly drizzle tomatillos and garlic with olive oil and season with salt. Place garlic and tomatillos, cut side down, on foil lined baking sheet. Roast in oven for 5-7 minutes or until the skins of the tomatillos begin blacken and blister. Remove from oven
  4. In a food processor add tomatillos, garlic, onion, cilantro, jalapeno, lime juice and sugar. Pulse in food processor until all ingredients are finely chopped. Salt to taste.

  7. Toss shimp in the chipotle powder, salt, and olive oil mixture.
  8. In a large skillet, saute shrimp in a single layer on medium high heat until cooked through, about 3-5 minutes. You may have to work in batches.
  9. Assemble tacos with salsa, shrimp, crumbled cotija cheese and garnish with a sprig of cilantro.
