Pasta With Broccoli And Chicken
- 1/4 c. virgin olive oil
- 2 cloves garlic, minced
- 4 chicken breasts, cut into 1 inch strips
- 2 c. broccoli florets
- 1/2 can crushed tomatoes (approximately 14 oz.)
- 1 tsp. dried basil
- 1/4 tsp. crushed red pepper
- salt and pepper
- 1/4 c. dry white wine
- 1 1/2 c. chicken broth
- 1 Tbsp. butter
- 1/2 lb. bow tie pasta
- Parmesan cheese
- Heat oil over medium heat.
- Saute garlic until golden brown. Add chicken strips and saute until white and almost completely cooked (7 to 10 minutes).
- Add broccoli and saute until still crisp.
- Add tomatoes, basil, red pepper, salt and pepper.
- Add wine, chicken broth and butter.
- Cook until heated through (5 minutes), stirring frequently.
- Toss with fresh cooked bow tie pasta.
- Serve with Parmesan cheese.
