Grandma'S Christmas Butter Tarts

  1. To make the pastry shells:
  2. Sift flour and salt together.
  3. Cut shortening or butter in dry ingredients until mixture looks like fine oatmeal.
  4. Chill until read to use.
  5. Roll pastry dough out on floured surface
  6. Use circular cookie cutter or glass to cut out circular crusts.
  7. Put crusts in bottom of greased or non-stick muffin tin.
  8. Preheat oven to 400 F.
  9. Beat egg, gradually adding brown sugar, salt, vanilla and lemon flavouring until mixture is full of bubbles.
  10. Fold in washed currents and melted butter.
  11. Drop mixture into crusts in muffin tins.
  12. Bake 12 - 15 minutes. Filling should be set and pastry nicely browned.
