Grandma'S Christmas Butter Tarts

- 6 cups pastry flour unsifted
- 2 1/2 cups salt
- 2 cups shortening or butter
- 1 egg
- 1 cup brown sugar
- 1 cup currants washed
- 2 tablespoons butter
- 1 teaspoon vanilla
- 1/2 teaspoon lemon flavouring
- 1/4 teaspoon salt
- To make the pastry shells:
- Sift flour and salt together.
- Cut shortening or butter in dry ingredients until mixture looks like fine oatmeal.
- Chill until read to use.
- Roll pastry dough out on floured surface
- Use circular cookie cutter or glass to cut out circular crusts.
- Put crusts in bottom of greased or non-stick muffin tin.
- Preheat oven to 400 F.
- Beat egg, gradually adding brown sugar, salt, vanilla and lemon flavouring until mixture is full of bubbles.
- Fold in washed currents and melted butter.
- Drop mixture into crusts in muffin tins.
- Bake 12 - 15 minutes. Filling should be set and pastry nicely browned.
