Driving Home For Christmas Cake
- 6 1/16 tablespoons olive oil
- 3/4 cup white sugar
- 1 egg
- 1/2 cup all purpose flour
- 1 teaspoon baking soda
- 1 cup whole milk
- 2 tablespoons orange zest
- 1/2 cup orange marmalade
- 1 pineapple large, juice, around 300 ml
- 4 oranges juice, around 300 ml
- 2 tablespoons lemon juice
- 2 tablespoons agar agar dissolved in 200 ml water
- 1 cup cream 33 %
- 4 tablespoons cane sugar
- 9/16 cup Orange cut into pieces
- 5/8 cup pineapple cut into small pieces
- 2 tablespoons orange liqueur
- 2 tablespoons agar agar in 200 ml water
- 1 15/16 cups mascarpone
- 1 15/16 cups curd smooth, 0.5 % fat, or cottage cheese
- 5 tablespoons cane sugar
- 1 cup coconut ground, to sprinkle over cake
- 7 ounces fondant
- Corpus :nix oil with sugar
- Stir in egg yolks
- Add milk
- Stir in dry sifted ingredients
- Whisk the egg whites and slowly stir in rigid foam
- Divide into halves and pour into 2 greased and floured spring forms (about 23 cm - 9 inches in diameter)
- Insert into the pre-heated oven at 180 u0b0C and bake for 25-30 minutes or until golden, do not open the oven during this time otherwise the dough will not rise
- Ambrosia/cream layer : Soak agar-agar in water for 10 min, then boil it on the medium heat for few minutes, set aside
- Pour agar-agar stirring into the mixed fruit juice, let it cool a little, but not let it harden
- Spread the marmalade on the first corpus then pour the agar-agar fruit mixture on the first corpus in the spring form, let it solidify in the fridge
- Place small pieces of fruits on the solid ambrosia layer
- Whip the cream, add sugar and mix in agar-agar that previously boiled and little cooled
- Pour the cream mixture on fruit pieces on the ambrosia layer in the spring form and let solidify in the fridge
- Cover : Spread the marmalade on the second corpus and place it on the top of solid agar layers
- Remove the spring form
- Mix mascarpone with curd and sugar
- Cover the whole cake with the mascarpone mixture
- Sprinkle the cake with coconut
- Finish : Color the fondant (pink) and make a little car using the mold
- Color the fondant (black) with carbon and make wheels
- Paint contours of windows and doors on the cars
- Use golden pearls for car lights
- Make a road from silver pearls on the top of cake and place on it the car
- Make a fondant tree, insert salt stick in it and paint with the green tube color
- Place the car on the silver road and the green tree on the roof
- Make 30 tiny white trees from fondant and place them around the cake
- Keep the cake in the fridge
