Beef And Bean Enchiladas
- 2 tablespoons olive oil
- 1 jalapeno pepper - diced with seeds
- 2 green bell peppers sliced
- 1 pound ground beef
- 1 cup scallions sliced
- 1/2 onion - sliced
- 3 cloves garlic - crushed and chopped
- 15 ounces black beans - drained
- 1 1/2 cups shredded Jack cheese
- 1 cup chunky salsa
- 1/4 cup fresh cilantro - chopped
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- In a large frying pan heat a tablespoon of olive oil over medium heat. Add the peppers, sliced onion and garlic; cook until softened, about 3 minutes. Add ground beef and scallions and cook until beef is browned. Remove from heat and add the beans and spices.
- Prepare a baking dish prepared with a tablespoon of olive oil. Fill each tortilla with 1/4 cup of the beef mixture; roll. Pour remaining salsa over tortillas. Sprinkle with remaining cheese. Cover with aluminum foil and bake for 20 minutes. Uncover and bake about 8 minutes.
