Beef And Bean Enchiladas

  1. In a large frying pan heat a tablespoon of olive oil over medium heat. Add the peppers, sliced onion and garlic; cook until softened, about 3 minutes. Add ground beef and scallions and cook until beef is browned. Remove from heat and add the beans and spices.
  2. Prepare a baking dish prepared with a tablespoon of olive oil. Fill each tortilla with 1/4 cup of the beef mixture; roll. Pour remaining salsa over tortillas. Sprinkle with remaining cheese. Cover with aluminum foil and bake for 20 minutes. Uncover and bake about 8 minutes.
