Healthy Cottage Cheese Burgers
- 3/4 pound ground beef
- 1/3 cup curd cheese low-fat
- 1 egg lightly beaten
- 1 onion small, finely diced
- 1 red bell pepper seeded and finely diced
- 1/4 cup fresh parsley chopped
- 2 tablespoons dry breadcrumbs
- 1 1/2 tablespoons dijon mustard
- 1 tablespoon vegetable oil
- 1/4 cup light mayonnaise
- 4 multigrain bread rolls split
- lettuce leaves
- tomato
- cucumber
- ketchup for serving
- Mix the ground beef, cottage cheese, egg, onion, bell pepper, parsley, breadcrumbs and 1 tbsp mustard in a bowl. Season with salt and pepper to taste, mix well and shape into 4 thin burgers.
- Heat the oil in a large skillet over medium-high heat. Add the burgers and cook for 2 mins per side. Reduce heat to medium and cook for another 4-5 mins per side for medium doneness.
- Mix the mayonnaise with the remaining 1/2 tbsp mustard. Spread evenly over the roll bottoms. Top with the lettuce, tomato and cucumber slices. Add a burger, some ketchup, then more lettuce, tomato and cucumber. Sandwich with the roll tops and serve.
