Walnut Cake (Greek Karidopita)
- 6 eggs
- 1 cup sugar
- 1 cup breadcrumbs
- 1 1/2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1/4 teaspoon ground cloves
- 1 1/2 cups chopped walnuts
- 2 cups sugar
- 2 cups water
- 1 tablespoon glucose or 1 tablespoon lemon juice
- 3 tablespoons brandy
- Beat the eggs with sugar till they turn white. Meanwhile, mix the bread crumbs with the baking powder and spices. Pour the mixture in portions into the beaten eggs, stirring gently with a spoon. Then, pour the nuts slowly and stir again gently.
- Pour mixture into a buttered pan (around 25 cm diameter). Bake the cake at 175o C for 30 -35 minutes.
- Meanwhile, prepare the syrup. Boil all the ingredients, except the brandy, for 5 minutes. Allow to cool, add the brandy and stir.
- S soon as the cake is ready, and still hot, pour with syrup (little by little). Do not pour the syrup all at once.
- Let it cool and invert the cake on a platter.
