Cole Slaw Salmon Burgers
- 5 ounces boneless salmon pouch
- 1 1/2 cups slaw leftover cole
- 1 tablespoon mayonnaise
- 1 tablespoon pickle relish
- 1 tablespoon lemon juice
- 1/4 cup breadcrumbs
- 1/4 teaspoon celery seed
- 1/4 cup cornmeal
- 1/4 teaspoon creole seasoning or Cajun
- 1 tablespoon olive oil for frying
- 4 buns
- 1 tomato sliced, optional
- In a food processor, grate 1 cup cole slaw. Set aside.
- In a bowl, separate salmon with a fork. Add the grated cole slaw to the salmon.
- Fold in mayonnaise. Add relish, lemon juice, celery seed, breadcrumbs. Mix with fork until well combined.
- In a separate bowl, mix cornmeal and Cajun seasoning.
- Dampen hands and form salmon mixture into 4 patties.
- Sprinkle cornmeal mixture over each side of party. Let excess fall off.
- Put patties in refrigerator to chill at least 1 hour.
- In a cast iron skillet over medium high heat, drizzle olive oil and cook the patties 3 1/2 minutes per side.
- Dress each party with 2 TBSP cole slaw and tomato slice or as your favorite burger.
