Chicken, Chanterelle And Marsala Tagliatelle
- 2 tablespoons olive oil
- 3 chicken breasts
- 7/8 pound chanterelle mushrooms
- 2 onions diced
- 7/8 pound tagliatelle fresh
- 1 tablespoon plain flour
- 6 3/4 tablespoons marsala
- 3 1/3 cups whipping cream
- 1 pinch caster sugar
- 1/2 cup fresh chives snipped
- 4 tablespoons Parmesan grated
- Heat the oil in a frying pan, add the chicken and cook for 5-6 mins on each side until cooked through. Remove from the pan and keep warm. Add the mushrooms and onion to the pan and saute, stirring, for 4-5 mins. Sprinkle the flour over the vegetables, then stir in the Marsala and cream. Mix in the sugar and season. Simmer, stirring, for 4-5 mins.
- Cook the pasta in boiling salted water for 3-4 mins. Mix the pasta and sauce together, then divide among 4 plates. Slice the chicken and serve on the side. Sprinkle over the chives and Parmesan, then serve.
