Lamb Kofta With Cucumber Yogurt
- 2 pounds ground lamb
- 1 clove garlic crushed
- 1 onion medium, finely chopped
- 1 red chili long, deseeded, finely chopped
- 2 tablespoons cilantro leaves chopped fresh
- 2 tablespoons fresh mint leaves finely chopped
- 2 tablespoons ras el hanout
- 4 flour tortillas
- 1 lettuce frisee, shredded
- 2 cucumbers deseeded, coarsely grated, excess liquid squeezed out
- 1 cup greek yogurt
- 1 teaspoon ground cumin
- 2 tablespoons chopped fresh mint finely
- 12 cold water wooden skewers, soaked in, for 30 mins
- Combine lamb, garlic, onion, chili, cilantro, mint and ras el hanout in a large bowl. Season with salt and pepper and mix well. Cover, refrigerate for at least 1 hour.
- Meanwhile, to make cucumber yogurt, combine the cucumber, yogurt, cumin, mint and salt to taste in a medium bowl and stir well to combine.
- Divide lamb mixture into 12 portions and shape around each skewer. Cook the skewers on a heated oiled grill or grill pan over a medium heat for about 10 mins, turning often, until browned and cooked through, but without burning.
- Grill the tortillas until warmed through. Top with the skewers, frisee and cucumber yogurt.
