Snow Peas Oriental

  1. Coat a nonstick skillet with cooking spray.
  2. Add oil; place over medium-high heat until hot.
  3. Add snow peas and carrots.
  4. Saute 2 minutes.
  5. Add water chestnuts and broth and bring to a boil. Cover and reduce heat and simmer for 5 minutes or until crisp-tender.
  6. Combine soy sauce and cornstarch, stirring until cornstarch dissolves.
  7. Add to vegetable mixture.
  8. Cook over medium heat, stirring constantly until sauce thickens.
  9. Serves 4. Serve immediately.
