Snow Peas Oriental
- vegetable cooking spray
- 1 tsp. light sesame oil
- 1/2 c. canned (no salt) chicken broth (undiluted) or broth from chicken
- 1 tsp. low sodium soy sauce
- 1/2 lb. fresh pea pods, trimmed or frozen
- 1/2 c. diagonally sliced carrots
- 1 tsp. cornstarch
- 1/4 c. sliced water chestnuts
- Coat a nonstick skillet with cooking spray.
- Add oil; place over medium-high heat until hot.
- Add snow peas and carrots.
- Saute 2 minutes.
- Add water chestnuts and broth and bring to a boil. Cover and reduce heat and simmer for 5 minutes or until crisp-tender.
- Combine soy sauce and cornstarch, stirring until cornstarch dissolves.
- Add to vegetable mixture.
- Cook over medium heat, stirring constantly until sauce thickens.
- Serves 4. Serve immediately.
