Aunt Sara'S Apple Pie
- 3 to 5 cooking apples (according to size)
- 1 c. sugar
- 1/3 stick butter or margarine
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. salt
- 1 Tbsp. lemon juice
- 2 eggs
- 1 (9-inch) unbaked pie crust
- Peel and slice apples
- and
- place
- in
- a
- heavy
- covered saucepan, adding only enough
- water
- to
- steam
- apples a tender crisp (2 tablespoons will
- be enough).
- Add lemon juice.
- Watch carefully, do not overcook.
- Add sugar to which salt and spices have been blended.
- Add margarine, stir lightly to blend.
- Beat eggs until foamy, add to
- apple
- mixture lightly and quickly to distribute
- eggs without uneven
- cooking
- of
- eggs.
- Pour
- into unbaked pie shell and bake at 325u0b0 until well done, about 50 to 60 minutes.
- This pie has a partially caramelized topping which is very good.
- Serve with ice cream or whipped cream.
