Chicketti(Or Chicken Cacciatore)
- 1 (4 lb.) hen or capon
- 1 medium onion, chopped
- 12 oz. pkg. spaghetti or elbow macaroni
- 1/4 lb. grated American cheese
- 1 small can pimento, chopped
- 1/2 c. celery, chopped
- 1 can mushroom soup
- 1/2 can tomato (optional)
- 1 small can peas, drained (optional)
- Cook hen until tender, remove bones and dice.
- Add water to broth to make 2 quarts.
- Add onion and cook for a few minutes. Add spaghetti and cook 20 minutes.
- Add celery, pimento and soup, stirring occasionally while adding ingredients; cook a few minutes.
- Add chicken, season to taste with salt and pepper and cook longer, stirring from bottom.
- Place in casserole and cover with grated cheese.
- Brown in oven about 30 minutes.
- Will serve 10 to 15 people.
