Glazed Parsnips
- 1 pound parsnips
- 1 tablespoon seasoned flour
- 2 1/8 tablespoons fat white, or dripping
- 3 5/16 tablespoons soft brown sugar
- 2 teaspoons white wine vinegar or tarragon vineg
- 1 paprika pch each of, and cinnamon
- Set the oven at Gas Mark 6 400 degrees F 200 degrees C. Peel trim and halve the parsnips.
- Cook in boiling salted water until halfcooked.
- Drain.
- If the parsnips are very large halve them again.
- Toss in seasoned flour.
- Heat the white fat or dripping in a roasting tin then add the parsnips.
- Baste well then bake for 20 to 25 minutes until almost tender.
- Put all the remaining ingredients into a small pan and heat until the butter melts and the sugar dissolves.
- Pour over the parsnips and cook for a further 10 to 15 minutes basting frequently.
- Serve immediately.
- Note: the parsnips are delicious served with roast poultry or a joint.
