Earl Grey Cupcake
- 2 3/8 tablespoons milk
- 2 tablespoons earl grey tea leaves
- 3 eggs
- 1/2 teaspoon vanilla extract
- 1 3/8 cups flour
- 3/4 cup sugar
- 3/4 teaspoon yeast or baking powder
- 2/3 cup unsalted butter
- 7 tablespoons unsalted butter icing
- 3 1/3 cups icing sugar icing
- 1/2 cup whipping cream icing
- 2 teaspoons vanilla extract icing
- Preheat oven at 170u0b0C
- Heat the milk and infuse 1 tsp of tea, during 4min. Pass through a sieve and keep the milk.
- Powder the other tsp of tea.
- Mix the milk, eggs and vanilla
- Put all the dry ingredients and the powdered tea in a bowl. Mix slowly.
- Add the butter and half of the milk mix.
- Mix slowly and then speed up during 1min.
- Add the rest of the milk mix and mix during 1min.
- Bake 20 to 35min
- For the icing : Mix all the ingredients (200g sugar) during 4min on medium speed. Then add another 200g sugar, and mix during 1min. Then you can add food coloring.
