Charcoal Smoked Bacon Wrapped Brats

  1. Cut onion in half, and quarter that half. Place into large pan on the stove
  2. Add 4 packages(or 4lbs of fresh) of brats/kielbasa into the pan.
  3. Poor both bottles of beer over the meat and onions slowly. I used Goose Island 312 Wheat Ale.
  4. Cook over medium heat. Bring to a simmer(do not boil), until all of the meat is no longer pink. Stir frequently. Do not overcook. Approx 15 minutes.
  5. As soon as the brats are in the pan and the heat is on. Head out to get your charcoal grill ready to roll. On the lower grate, take it out, foil half of it and put it back in place. Put a small foiled pan with woodchips in water on the lower half. Take the upper grill off and using the non-stick foil, cover the entire grate. Using a coal chimney, start the coals.
  6. In a large bowl combine 4 cups of brown sugar, and 3-4 Tablespoons Cayenne pepper(Season to taste). Much of the pepper's heat gets burned off.
  7. Cut the bacon into thirds.
  8. Take 60 toothpicks out of the box.
  9. Remove the brats from the broth, and pat dry on thick paper towel.
  10. Go back out to the grill and grayish coals onto the opposite side of the smoking pan. Put top grate with foil on. Then cover grill with top and bottom vents fully open.
  11. Cut brats into thirds. Approx 2-3" each.
  12. Roll one piece of bacon around each brat piece, and hold with a toothpick
  13. When all of the brats are rolled, place 6-8 in the large bowl, place a top on and shake in different directions to coat the meat. Take cover off and roll any pieces by hand until most of surface is coated and place on baking sheet. Continue until all pieces are coated.
  14. When all of the brats are rolled, place carry these badboys out to your grill. Have a table set up next to the grill to remove cooked pieces.
  15. Place all pieces onto the grill, and cover(make sure top vents are opposite the coals on the bottom.) Check approximately every 6-8 minutes. The pieces cooking directly over the coals on the foil will obviously cook first. Turn meat over once, to allow bacon to cook evenly. Caramelize and cook to your choice of how you like your bacon. Then remove.
  16. Once you removed cooked pieces. Using barbecue thongs, slide the other meats toward the direct heat. Cover and repeat the same sequence.
  17. One note. I did not pick up the meat, I slid each piece through the melted sugar and juices. I felt this enhanced the meat. The picture at the top helps show this.
