Smoked Adobo Chicken Tacos
- 8 corn tortillas 6-inch
- 1 whole roasted chicken about 2 1/2 pounds
- 8 ounces fresh goat cheese
- 2 tablespoons adobo sauce from canned chipotle chilies
- 1 mango peeled and chopped
- 1 tablespoon chopped cilantro
- 2 tablespoons red onion finely chopped
- 1/2 lime
- Pull chicken from bone and shred into large pieces. Toss chicken with 1-2 tablespoons of adobo sauce (depending on desired level of heat); set aside.
- In a small bowl, combine mango, cilantro, red onion, and lime juice; set aside. Spray each tortilla with cooking spray. Place two tortillas, greased side down, on each cedar paper. Top with desired amount of chicken and goat cheese. Roll tacos and wrap papers around tacos, securing with cotton string.
- Preheat grill pan to medium heat. Cook cedar wrapped tacos for 4 minutes per side or until smoky and thoroughly heated. Serve immediately with fresh salsa on the side.
