Berry-Mandarin Tossed Salad
- 1/4 c. sugar
- 2 Tbsp. cider vinegar
- 2 Tbsp. honey
- 1 1/4 tsp. lemon juice
- 1/2 tsp. paprika
- 1/2 tsp. ground mustard
- 1/2 tsp. grated onion
- 1/2 tsp. celery seed
- dash of salt
- 1/3 c. vegetable oil
- 8 c. torn salad greens
- 2 c. sliced fresh strawberries
- 1 (11 oz.) can mandarin oranges, drained
- 1 medium sweet onion, sliced
- 1/3 c. toasted slivered almonds
- 4 bacon strips, cooked and crumbled
- In a 2-cup microwavable bowl, combine sugar, vinegar, honey, lemon juice, paprika, mustard, onion, celery seed and salt. Microwave uncovered on High for 1 1/2 to 2 minutes.
- Stir until sugar is dissolved.
- Whisk in oil.
- Cover and refrigerate until ready to serve.
- In salad bowl, combine greens, strawberries, oranges, onion, almonds and bacon.
- Drizzle with dressing and gently toss to coat.
- Yield: 12 to 14 servings.
