Chinese Pepper Steak
- 1 lb. lean round steak
- 1 Tbsp. paprika
- 2 Tbsp. margarine
- 2 cloves garlic
- 1 small can bamboo shoots
- 1/4 c. soy sauce
- 1 1/2 c. beef broth
- 1 c. sliced onion
- 2 green peppers, cut into strips
- 1 can bean sprouts
- 2 Tbsp. cornstarch
- rice
- While rice is cooking, pound steak to 1/4-inch thickness.
- Cut into strips.
- Sprinkle meat with paprika and allow to stand while preparing other ingredients.
- Using large skillet, brown meat in butter. Add garlic and broth. Cover and simmer 30 minutes.
- Stir in onions and peppers.
- Cover and cook 5 more minutes. Blend cornstarch, water and soy sauce. Stir into meat mixture.
- Cook, stirring, until clear and thick, about 2 minutes. Add tomatoes and other vegetables.
- Stir gently.
- Heat until all vegetables are hot. Serve over fluffy rice.
