Greek Summer Salad
- 1 cup red-leaf lettuce
- 1 cup iceberg lettuce
- 1 cup spinach
- tomato 1 med., chopped
- black olives or cup green
- 1/2 cup cucumber chopped
- 1 handful alfalfa sprouts
- 1 tablespoon celery minced
- 1/4 cup carrots grated
- 1/4 cup red pepper strips
- 1/4 cup yellow squash cut long slivers
- 1/4 cup zucchini grated
- 3/4 cup crumbled feta or grated Jack cheese
- 1/2 cup herb dressing
- 1 clove garlic minced
- 5 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon savory
- 1/2 teaspoon salt
- 1 teaspoon mustard
- 1/4 teaspoon coriander
- 1/8 teaspoon sage
- 1 tablespoon mayonnaise
- Combine all vegetable ingredients in medium salad bowl. Add dressing and cheese, toss gently. Makes 2 servings.
- Mix all ingredients in large jar with tight lid. Refrigerate until use.
