Feta Meatballs With Greek Salad
- 4 tablespoons white wine vinegar
- 1 teaspoon dried oregano
- 6 tablespoons olive oil
- 1 pound mixed bell peppers deseeded and diced
- 1 pound tomatoes diced
- 3/4 pound cucumber diced
- 2 onions thinly sliced, plus 1 finely diced onion
- 1/4 cup black olives
- 3 tablespoons parsley finely chopped
- 1 pound ground beef
- 1 medium egg
- 1/4 cup breadcrumbs
- 1 pinch cinnamon
- 1/2 cup feta cut into 10 cubes
- Mix the vinegar and oregano together and season. Whisk in the oil. Mix the bell pepper, tomato, cucumber, 2 sliced onions and olives with the vinaigrette. Set aside.
- Place the diced onion, parsley, ground beef, egg, breadcrumbs and cinnamon in a mixing bowl and season. Knead until smooth then form into 10 oval-shaped meatballs then flatten them slightly. Thread the cheese onto skewers and form the meatballs tightly around the cheese.
- Heat 2 tbsp oil in a frying pan, add the meatball skewers and fry for 8-10 mins, turning. Divide the salad and skewers between 4 plates then serve.
