Chicken Pesto Pizza

  1. Place the Smart Oven+ Grill Attachment in oven. Select GRILL Mode and preheat Grill to High heat setting.
  2. Roll out raw pizza dough on a countertop approximately 12 inches in diameter.
  3. Once the grill is preheated, lower the temperature setting to Medium, and partially bake the pizza dough on the preheated Grill Attachment for about 4 minutes until it is a light golden color. Carefully remove the dough from the oven with a pizza peel or flat baking sheet. Return the Grill Attachment to the oven, so it stays at temperature.
  4. Turn crust over so the grilled side is facing up. Spread the pesto sauce evenly over the crust. Sprinkle the roasted chicken on top of sauce. Place the vegetables on top of the pizza in the following order: roasted red pepper, sliced red onion, then the roma tomato. Sprinkle the gorgonzola cheese and the gruyere cheese on top to cover the ingredients. Add the Mozzarella cheese on top.
  5. Transfer pizza back onto Grill. Bake approximately 30 minutes until the cheese is melted and the sauce is bubbling. (To obtain a criss-cross pattern on the bottom of the pizza, rotate the pizza 1/4 turn after about 20 minutes.)
  6. Remove the pizza from the oven using the pizza peel or baking sheet. Place the baked pizza on a large cutting board. Let rest for about 3 minutes before slicing into desired number of pieces.
