Vanilla Bean Panna Cotta
- 1 1/2 cups milk
- 1 1/2 cups cream thickened
- 1/2 cup caster sugar
- 1 teaspoon vanilla bean paste
- 2 1/2 teaspoons gelatine powder
- In a small bowl, add 1/2 cup milk and sprinkle gelatine powder on top. Set aside for 5-10 minutes.
- In a saucepan, bring remaining milk and thickened cream to a simmer.
- Add sugar and vanilla bean paste and stir until sugar is dissolved.
- Stir in the gelatine/milk mixture and remove from heat.
- Pour mixture into lightly oiled dariole moulds and leave to cool to room temperature.
- Transfer panna cottas to fridge to set for a minimum of four hours (preferably overnight).
- To remove from moulds, dip them in warm water for a few seconds and then carefully up-end them on your plate.
- You can serve your panna cotta with fresh berries and a sauce. The panna cotta pictured above has been drizzled with honey and served with fresh raspberries. Enjoy!
