Vanilla Bean Panna Cotta

  1. In a small bowl, add 1/2 cup milk and sprinkle gelatine powder on top. Set aside for 5-10 minutes.
  2. In a saucepan, bring remaining milk and thickened cream to a simmer.
  3. Add sugar and vanilla bean paste and stir until sugar is dissolved.
  4. Stir in the gelatine/milk mixture and remove from heat.
  5. Pour mixture into lightly oiled dariole moulds and leave to cool to room temperature.
  6. Transfer panna cottas to fridge to set for a minimum of four hours (preferably overnight).
  7. To remove from moulds, dip them in warm water for a few seconds and then carefully up-end them on your plate.
  8. You can serve your panna cotta with fresh berries and a sauce. The panna cotta pictured above has been drizzled with honey and served with fresh raspberries. Enjoy!
