Italian Pork Stew
- 1 pound pork stew meat or pork loin cut in 1" pieces
- 1/3 cup flour
- 1/2 onion large, chopped
- 5 garlic cloves diced
- 14 1/2 ounces diced tomatoes undrained
- 1/2 cup dry red wine
- 1 cup beef broth
- 1 tablespoon red wine vinegar or apple cider vinegar
- 1 tablespoon tomato paste
- oregano to taste
- basil to taste
- salt
- red pepper flakes to taste
- fresh parsley to taste
- Place flour in a large resealable plastic bag. Add pork, a few pieces at a time, and shake to coat. In a 2 qt or larger pan, brown pork in olive oil. Remove and keep warm.
- In the same pan, saute onion in remaining oil until crisp-tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, wine, broth, tomato paste, vinegar, herbs, salt, pepper flakes, pepper and pork; bring to a boil.
- Reduce heat; cover and simmer for 1-1/2 hours, stirring occasionally. Stir in parsley. Cook uncovered 30 minutes longer or until meat reaches safe pork temperatures.
- Serve as is with vegetables, over pasta/rice, or sprinkle with fresh parmesean!
