Whole Baked Chicken In Lime Grass And Coconut Milk Recipe
- 3 teaspoons ginger Grated
- dried parsley
- dried basil
- 3 cloves minced garlic Crushed and
- 1 teaspoon palm sugar or Brown or white
- 2 pieces lime grass
- 1 tablespoon tomato pure
- black pepper
- sea salt
- white pepper
- 1 whole chicken cut in to quarters, or any kind of chicken pieces
- 2 cans coconut milk
- 1 lemon
- dried chilli
- rice to accompany your dish, jasmine rice
- Set your oven for 220 Celsius.nnStart with preparing your ingredients on a plate.nnGrate your ginger. nrepare your dried parsley and basil. nour sugar. nnd mince your garlic. nut your each of your lime grass in 4 pieces. nalt, black and white pepper for seasoning.
- Mix all of these ingredients in a pot and add your coconut milk and tomato pure. Let it simmer on medium heat to help all your flavours to combine (you can also fry it in a pan on medium heat if you wish - be careful to not burn your garlic). nnMeanwhile prepare your chicken and cut them in desired pieces. Place your pieces in a medium baking tray (depends on how much or little you are baking - larger for more chicken and a smaller for just few chicken bites) upside down (you will be turning your chicken later on) and pour over your coconut milk sauce and add lemon juice from 1 whole lemon. nprinkle with some dried chilli if you like some heat.
- Bake in the oven for 35 minutes and turn your chicken bites around. nake for additional 35 minutes. nnCheck if your chicken have been cooked all the way to the bone. nf it needs some extra time or your chicken is getting darker faster than it is being baked you can protect your chicken with a tin foil. nnServe your chicken with boiled rice. I recommend jasmine rice for the taste and flavour. nnEnjoy.
