Shrimp Elegante
- 2 Tbsp. minced shallots
- 2 Tbsp. butter
- 1 lb. deveined cleaned shrimp
- 1/4 lb. sliced mushrooms
- 1 tsp. salt
- 1/8 tsp. pepper
- 3 Tbsp. chili sauce
- 1 2/3 c. water
- 1 1/3 c. Minute rice
- 1 c. sour cream
- 1 Tbsp. flour
- 1 Tbsp. chopped chives
- 2 Tbsp. shortening
- 1 1/2 c. biscuit mix
- 3/4 c. milk
- 1 (8 oz.) can sausages
- 1 (8 oz.) can mushroom caps
- 1 (6 oz.) can tomato paste
- 1 c. shredded cheese (Mozzarella or Cheddar)
- 1 tsp. oregano
- Grease cold frypan on bottom and sides with shortening. This will make a thick coat of grease. In a small bowl, mix biscuit mix and milk together. Spread dough evenly in frypan. Arrange sausages and mushroom caps on dough and top evenly with tomato paste, then cheese and sprinkle with oregano. Cover. Turn control dial to 325u0b0 and bake until done.
