Palermo Salad
- 1 cup olive oil
- 2 tablespoons rice wine vinegar
- shallot cup chopped
- 1 cup chopped fresh chives
- 1 tablespoon Thai pepper minced
- chopped garlic teaspoon finely
- 1 teaspoon minced ginger
- 1 salt and pepper
- 1 cup turnip chopped into matchstick pieces
- 1 cup carrot chopped into matchstick pieces
- 1 foccacia
- 1 ounce Boston lettuce head
- In a large bowl whisk together olive oil, vinegar, shallots, chives, Thai pepper, garlic, ginger, salt and pepper. Place turnip and carrot in vinaigrette, cover with plastic wrap and refrigerate for 1 hour.
- Cut Foccacia in half to create two thin rounds. Preheat grill to medium and oil rack. Grill Foccaccia until golden grill marks appear. Remove from grill and slice into wedges.
- Arrange lettuce on a large platter, place grilled foccacia wedges on lettuce, and distribute turnip, carrots and vinaigrette over foccacia.
