Palermo Salad

  1. In a large bowl whisk together olive oil, vinegar, shallots, chives, Thai pepper, garlic, ginger, salt and pepper. Place turnip and carrot in vinaigrette, cover with plastic wrap and refrigerate for 1 hour.
  2. Cut Foccacia in half to create two thin rounds. Preheat grill to medium and oil rack. Grill Foccaccia until golden grill marks appear. Remove from grill and slice into wedges.
  3. Arrange lettuce on a large platter, place grilled foccacia wedges on lettuce, and distribute turnip, carrots and vinaigrette over foccacia.
