Lasagna With Turkey Sausage
- 2 tablespoons olive oil
- 1 cup yellow onion chopped
- 2 garlic cloves minced
- 1 1/2 pounds sausage casings sweet italian turkey, removed
- 28 ounces crushed tomatoes in tomato puree
- 6 ounces tomato paste
- 1/4 cup flat-leaf parsley chopped
- 1/2 cup fresh basil leaves chopped
- kosher salt
- ground black pepper
- 1/2 pound lasagna noodles
- 15 ounces ricotta cheese
- 4 ounces goat cheese creamy
- 1 cup grated Parmesan cheese plus 1/4 cup for sprinkling
- 1 large egg lightly beaten
- 1 pound fresh mozzarella thinly sliced
- Preheat oven to 400 degrees
- Heat olive oil in large skillet. Add onion and cook for 1 more minute. Add sausage and cook over medium-low heat, breaking it up with a fork, for 8-10 minutes. Add tomatoes, tomato paste, 2 tbsp parsley, basil, 1 1/2 tsp salt, 1/2 tsp pepper. Simmer, uncovered, over medium-low heat, for 15 to 20 minutes, until thickened.
- In a medium bowl, combine ricotta, goat cheese 1 cup parmesan, beaten egg, the remaining 2 tbsp parsley, 1/2 tsp salt, 1/4 tsp pepper. Set aside.
- Ladle 1/3 of sauce into rectangular baking dish, spreading sauce over bottom of dish. Then add half the pasta, half the mozzarella, half the ricotta mixture, one third sauce. Add the rest of pasta, mozzarella, ricotta mixture, and sauce. Sprinkle 1/4 cup parmesan cheese
- Bake for 30 minutes or until bubbling
