Half Time Fajitas
- 1 tablespoon chili oil
- 1 2/3 pounds boneless skinless chicken thighs trimmed and sliced
- 1 red pepper seeded and thinly sliced
- 1 red onion thinly sliced
- 1 pound large shrimp peeled and deveined
- 3/4 cup sweet and sour stir fry sauce
- 1/2 cup chopped cilantro coarsely
- 1 lime peel finely grated and lime juiced
- 12 flour tortillas
- cherry tomatoes
- roasted cashew nuts
- arugula leaves
- Heat oil in a large skillet on high heat. Cook chicken 4-5 mins, until well browned.
- Add pepper and onion; cook, stirring, 2-3 mins, until softened.
- Add shrimp; cook 1-2 mins, until almost cooked through. Stir in sauce; cook 2-3 mins, until heated through.
- Stir in cilantro and lime peel and juice. Pile onto tortillas. Serve with arugula, tomatoes and cashews.
