Black Bottom Cups
- 1 c. soft cream cheese, at room temperature
- 1 unbeaten egg
- 1 1/3 c. sugar
- 1/8 tsp. salt
- 1 c. (6 oz. pkg.) semi-sweet chocolate
- 1 1/2 c. flour
- 1/4 c. cocoa
- 1 tsp. soda
- 1/2 tsp. salt
- 1 c. water
- 1/3 c. cooking oil
- 1 Tbsp. vinegar
- 1 tsp. vanilla
- Combine in mixing bowl, cream cheese, egg 1/3 cup sugar and 1/8 teaspoon salt, beat well.
- Stir in chocolate pieces, set aside. Sift flour, 1 cup sugar, cocoa, soda, 1/2 teaspoon salt into mixing bowl, combine water, cooking oil, vinegar and vanilla.
- Add dry ingredients and mix well.
- Fill muffin cups 1/3 full with chocolate batter.
- Top each with heaping teaspoon of cream cheese mixture.
- Bake at 350u0b0 for 30 to 35 minutes.
