Fruit Bars
- 3 c. all-purpose flour
- 1 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1/4 tsp. ground cloves
- dash of salt
- 2 c. sugar
- 2 c. butter or margarine, softened
- 3 large eggs
- 1 c. chopped dates
- 1 tsp. baking soda, dissolved in 2 tsp. water
- 1 c. chopped walnuts
- additional sugar
- Mix flour, cinnamon, nutmeg, cloves and salt.
- Beat sugar and butter in a large bowl with electric mixer until light and fluffy. Beat in eggs, one at a time.
- Add dates and dissolved baking soda. On low speed, gradually beat in flour mixture.
- By hand, stir in nuts.
- Chill several hours until firm.
- Heat oven to 350u0b0.
- Grease baking sheets.
- Form dough into 6 rolls, about 10 inches long on a lightly floured surface.
- Place 2 rolls 5 inches apart on each prepared baking sheet.
- Flatten to 1/2-inch thickness.
- Sprinkle with sugar.
- Bake 15 to 18 minutes until golden brown (longer baking time will produce crisper cookies).
- While hot, cut diagonally into 1-inch slices.
- Cool on baking sheet 5 minutes. Remove and cool on wire racks.
- Makes 60.
