Easy Oriental Chicken And Noodles
- 2 Tbsp. cornstarch
- 1 (14 oz.) can clear chicken broth
- 2 Tbsp. soy sauce
- 2 (3 oz.) pkg. chicken flavor Ramen noodle soup
- 2 Tbsp. oil
- 1 lb. chicken, cut into strips
- 5 c. frozen stir-fry vegetables of choice
- 1/4 tsp. ground ginger
- In small bowl, stir together cornstarch, broth and soy sauce until smooth and set aside.
- Cook noodles in water with seasoning packets.
- Drain off liquid and set aside.
- In skillet or wok, stir-fry half of the chicken in the oil.
- Remove; stir-fry remaining chicken.
- Remove and set aside.
- Add vegetables and stir-fry until tender-crisp.
- Add ginger.
- Add cornstarch mixture and chicken to vegetables.
- Cook until thickened, stirring constantly.
- Serve over the noodles.
- May add soy sauce to taste.
