- 5 1/4 ounces trout fillet
- 1 can tomato sauce
- 3/4 cup flour
- 7/8 cup sparkling water very cold
- 1 egg yolk
- 2/3 pound maltagliati
- 8 zucchini flowers
- sunflower oil
- 4 zucchini small
- 2 carrots medium, chopped
- 1 onion chopped
- 1 celery stick
- dill chopped
- To prepare the tempura, you need a large and small bowl. Put ice in the bigger bowl and place the smaller bowl on top so that it stays cool. Mix the egg and add the water to it. Sift the flour and mix it in until smooth. Heat sunflower oil and immerse the zucchini flowers in the batter. Fry until golden on both side and flip them over when needed. Repeat until all flowers have been used.
- Heat olive oil in a pan and add the carrots, onions, zucchini and celery. Cook over medium heat until they soften.
- In the meantime, clean the fish and take the skin off. Cut both the salmon and the plaice. into small cubes. Add the fish to the chopped veggies and cook for a couple of minutes at high heat. Add white wine and let it evaporate. Add the tomatoes sauce and cook over medium heat for 10 minutes.
- Boil abundant water in a large pan. Add the pasta to boiling water and season with salt. Cook for 5/7 minutes.
- Add the cooked pasta to the sauce and season with fresh chopped dill. Decorate with the zucchini flowers.
